Can I safely turn the error log off? What is the result if I do that? Sorry if this is a stupid question. Thanks.

You can turn the Security Log off on the BPS Security Log page. Yes, the decision is entirely up to you whether or not you want to have blocked hacking attempts or HTTP errors logged. Logging is just logging and does not have to do with adding or removing security from your website.
